Planning an RV camping can be stressful at times. There are a lot of things to take into consideration, such as the weather, schedule, availability of rental RV, etc.! That’s why we have compiled this short list of easy meals that you can prepare during your RV camping trip!

Classic Tacos 

First on our list is everyone’s favorite – tacos. For this recipe, prepare the following ingredients:   

  • 1 pound ground turkey 
  • Tortillas 
  • 2 diced tomatoes 
  • 1 sliced purple onion 
  • A bunch of cilantro 
  • One store-bought taco mix  
  • Optional: Cheese, salsa  

Saute the onion and tomatoes in vegetable oil. Add the ground turkey into the pan. Season with taco mix. Wait until the meat is fully cooked. Sprinkle with chopped cilantro. Warm tortillas in a pan or oven. Assemble with chopped onions, tomatoes, and meat in a tortilla. Add some cheese or salsa to top it off!

Mac n’ cheese  

For this crowd favorite, you will need the following ingredients:  

  • 2 tablespoons butter 
  • 2 tablespoons flour 
  • 3 cups of water 
  • 4 cups of milk 
  • 1 pound uncooked elbow macaroni 
  • 1 teaspoon salt 
  • 1/2 teaspoon garlic powder 
  • 1/4 teaspoon ground mustard 
  • 4–5 cups sharp cheddar cheese  
  • 1/2 cup Parmesan cheese 

The first step is to boil macaroni in sea-salty water until al dente. In a separate pan, melt the butter. Add the flour to make the roux. Gradually add the water. Pour in the milk into the pot. Once everything is adequately combined, add the cheeses in. Wait for cheese to melt. Add the salt, mustard, and garlic powder. Stir well. For the last step, pour the cooked macaroni into the mixture. Once the mac n’ cheese is done, you can now pack it into thermos containers. Serve with freshly grated parmesan.  

Egg salad sandwich 

You only need seven things for this vegetarian-friendly RV camping meal! What is good is that you probably already have all of these in your pantry right now! 

  • 8 eggs 
  • 1/2 cup mayonnaise 
  • 1 teaspoon yellow mustard 
  • 1/4 cup chopped green onion 
  • salt and pepper to taste  

Boil the egg for about 10 to 12 minutes. Immediately place the eggs in cold water to stop the cooking process. Peel and chop the eggs. Place the egg in a bowl and add mayonnaise, green onion, and mustard. Season it with salt, pepper, and paprika to taste. Serve on whole-wheat bread.
